Chances that the water is being lost through evaporation in the combustion process had a diesel Passat that did exactly that no mayo signs but when it got hot water wasn’t in the combustion chamber

Interesting Read Rolling Eyes .
Question a porous block though, surely you would have an issue with the engine components before the block. No signs of snail trails around the engine showing possible leaks.

How long have you been topping up the coolant system, how often & what quantity?.
Any signs of water leaks, smell of antifreeze when hot etc.
Has the engine ever over heated?.
Any history of coolant issues, work being carried out previously by previous owners etc.
White smoke being omitted from the exhaust?.

More than likely the coolant is entering the cylinders from another means rather than a porous block.

We await the update (bet they suggest an exchange engine) Rolling with laughter

Coolant may be getting into the combustion chamber via head gasket and being 'burnt' off (converted to steam).
Usually the coolant system would get pressurised by the combustion gases if there's a leak into the combustion chamber which leads to bubbles and oil in the system (mayonnaise). There's a simple check for gases in the coolant with colour changing dye which snifs the gases in the expansion tank (called a 'block tester') or it can be checked for CO2 content with an exhaust gas analyser.
It doesn't always happen though, coolant can leak into the combustion chamber without causing a reverse effect to the coolant system. A Leak Down test may help although pressures would be less than happens during combustion so may not show issues. The other check would be inspection of the combustion chambers for effects of the 'steam' cleaning caused by a coolant leak.
A bad leak would be obvious by steam in the exhaust when running.

What sort of loss are we talking here?

'Undetectable' smaller leaks would be stuff like the heater matrix although bad leaks there would lead to steaming up of the cabin when running.

Only topped it up twice in past 2 weeks. Once was the 1st time I was aware of the problem and put 1 litre in. 5 days later 1/2 litre.

Any signs of water leaks, smell of antifreeze when hot etc.

No signs of water leaks. I have noticed a few time’s a hot smell after getting out of the car.

Has the engine ever over heated?.

not that I am aware of.

Any history of coolant issues, work being carried out previously by previous owners etc.

Only 1 previous owner. No history of any coolant work at all.

Get a large dose of k seal in there
Run it, say nought to anyone, and see how it goes.
If it's a tiny leak flashing to steam that would seal it.
That's what I'd try before launching a lot of money at it.
