I imagined it would turn off when a certain coolant temp was reached.

I think mine is to. I just drove 3 miles and parked up for 10 minutes. Then drove a few hundred yards and parked up to be greeted with a cloud a diesel smelling smoke coming from the wheel arch. |

According to the WSM the FBH runs in auxiliary heating mode until one of a set of conditions is met.
