It's been mentioned on here before that the later VDS equipped struts are longer than the earlier versions and only the OE bags are the right length with others not fitting properly.

Might be worth having a search through previous posts for details, but thought I'd just mention it.

I've just checked and my front struts are VDS - they've got the wired cap on the top of the strut. How would this affect the rear of the car though?

VDS is just a damper technology. It's on all four corners. The issue I mentioned is that VDS rear dampers are apparently longer than the earlier ones and this has resulted in people experiencing issues with non-OE rear airbags. You said you had new Aerosus bags fitted which may be not long enough to match with the rear damper lengths. 2012 (L322) 4.4TDV8 Vogue SE, RSE, Fuji White over Arabica.

Would that not have been apparent when the new air bags were fitted? And, would an issue have presented itself in the six(ish) week since they were fitted?

Maybe. Depends on how experienced the fitter was and their knowledge of the FFRR model year differences.

And maybe, maybe not. It might only be an issue in certain situations of articulation or extension. We're all guessing here without diagnostics to give us some clues. 2012 (L322) 4.4TDV8 Vogue SE, RSE, Fuji White over Arabica.
