So I managed to get the RR in to have the tracking looked at, due to fitting new track rod ends and the rear drivers side tyre wearing out on the inside edge (about 5cm).
Took it in, only the drivers side track rod end needed the slightest of adjustment.
However when they came to look at the camber adjustment on the eccentric bolt, they suggested that I fit a new bolt, as there convinced it will snap if the try to adjust it with a spanner.

So is this something I can do on my drive, do I also need a new bush if changing the bolt, and could I also fit a new bush on the drive too

Yes you can do it on your drive. Wire brush the nut and thread and just keep soaking it with a penetrant for a few days. I used plus gas. My bolt wasn't seized in the bush luckily. Try cracking the nut loose a bit then see if you can get the bolt to move. Mark the position of it first though.
If it moves you should get it out. I bought a pull and push kit to get the bush out.

That bolt is very chunky - it's an M14!

There's no way it'll snap unless they're hanging off it with a 6ft 3/4" breaker bar IMO.

When I did a load of work on mine recently the bolts in the toe control arm were seized. They're a much smaller diameter and I couldn't get them to sheer even when trying!
