Firstly, for that to work, you would have to have the BT incorporated with the amp in such a way that it would be disabled when you plug into the Aux. It can easily be done with a switching jack socket, but then you would have to install that in place of the original if you wanted to keep the original appearance and location of the aux socket. It could be a challenge in terms of the actual permanent install, but technically speaking it wouldn't be difficult. I won't bother, simply because any aux source I would use supports BT anyway.
On the amp you suggested: This has 2x8w output and is designed to drive speakers. It's much too powerful, I'm afraid. What you need is a line preamp or a vloume-adjustable headphone amp.
