Thought I had nailed it. It appears not so lol..for some reason it won't hold revs under 1000rpm. Over 1000 it sits beautifully.. I had a slight success spraying the throttle body with carb cleaner and I'm wondering if I should try again? I have new spark plugs to fit, all filters are changed and fluids and cars not giving me any engine faults apart from an electric thermostat one..
For what it's worth she pulls like a train and is fine apart from this, I have bad OCD and won't rest until I've solved this

At the end where it goes to 1400 rpm, Is that the automatic "choke" function coming on which it does when the engine is cold or is it you giving some gas?

Looks like an air/vacuum leak with the associated overcompensation.
Get some brake cleaner in a sprayer and as it runs spray all around the engine bay/where you have been busy with other things. Be careful as it is flammable!
When the revs pick up you have narrowed down the area you have a leak. If it is one....

It's me giving it gas.. it's perfect over 1000rpm between 800 and 1000rpm is iffy.. mag looks new but could be dodgy I'm thinking

Explain electric thermostat fault a bit more?
If you have a sensor giving ECU a bad reading then it could be trying to compensate for that.
Seen that with a dodgy oil temp sensor on a tdv8 - idled like crap. 2007 Vogue TDV8 with 255/55/20's fitted

Check your air filter is correctly attached to the pipe as that can cause rough idling?

Will double check all connections.. I did remove air box to remove headlight a while back.. had a lot of trouble attaching it at the bottom where the external air intake pipe meets the box.. could that cause it??

Mine was fixed with a replacement MAF, but i would see if anyone is local and swap over with a other car first to test.

anything below 1k RPM is would hunt above this it was perfectly fine.

also would get tiny amount hesitation when engine was cold and pulling out.

its a 2003 4.4 V8 just had updated speedo dials.

Looks very much the same until mine gets to 1000rpm then she's perfect. I'm getting it smoke tested for free at the weeekend and if that doesn't give me any resolve I think the maf will be changed.. Pcv systems been overhauled so I can at least rule that out.. mine occasionally dims as well
