Might sound silly but how do I do the above?

Ive been using the paddles recently to vary the rpm, to help with running the engine in (varying the rpm whilst maintaining a constant speed)

But when I want to switch back to normal "D" and not use the paddles, I find myself having to shift to sport or Neutral, then back to D to cancel the paddles out.

Is there an easier way ?

Completely unnecessary as engines are run in during production now a days sir

Thats actually what I thought, but then my supplying dealer told me to follow this run in procedure for the first 800km/500 miles....ie avoid hard acceleration, heavy braking, vary the rpm

So since I was unsure I thought I might as well.

Would you say its not necessary then?

I would say 500 miles is good advice as it will bed your brakes and scruff the tyres in so its not just engine.
