I think what you see as an update process when you connect is the tool pulling a list of what the latest levels of firmware are for various ECU's in the vehicle and similar. I think it's just pulling a basic list, which when it does finally talk to the proper it can ask an ECU what level of firmware it actually has, and then compare it to the latest versions its just pulled from GAP. The tool can then tell you whether there is updated firmware for your ECU's. ( and charge you for the updates )
My experience is that if you want to update the dongle unit itself and the actual functions it offers, then you need to plug it in and use the updater tool from GAP.

My one is just a normal micro USB cable. You can buy USB C to Micro cables for peanuts which will plug into your Mac. V8 or else ...
