What is missing in my EGR valve?

I’ve started the awful job of changing the thermostat housing on my 3.6 tdv8 and when I’ve removed the EGR’s they have these valves in the coolant side, both are broken would it be an issue to just remove them all together, I have blanking plates for the EGR (exhaust side not coolant) when I put it back together anyway (does this have to be mapped out on a pre facelift 3.6?)
