However, for the purists, coq au vin is traditionally made with a cock (as in the male bird, Stan ...) or cockerel, but chicken can also be used. When made with chicken, it is sometimes called poulet façon coq au vin ("coq au vin style chicken").

Volaille indeed translates as 'fowl' or 'poultry', and is a generic term, as are the two English equivalents. (The word derives from the Latin volatilia - animals which fly.) It therefore covers all types of poultry, including chicken. For example, croquettes de volaille is 'chicken croquettes' ('nuggets')
So it very probably was chicken you saw on the menu yesterday!
